Kitchen Waste has Value
While I was in the midriff of preparing a holiday meal , I stopped in mid - chop and looked at the big pile of potato peelings , celery trimming and carrot scraps . “ What a disgrace to toss away this kitchen waste into the compost bin , ” I thought .
It pass to me I had read formula for making potato skin broth , so I think my sight of scraps might have some potency . Because I was too busy at the time to start a newfangled cooking project , I simply stuffed everything into a shaping dish and put it in the fridge .

A few sidereal day later I prepare about to make a peck of vegetable pedigree . I grabbed the bag of veggie discard and cleaned out the vegetable bin of a parcel of wilted parsley , a soft sweet white potato , a quartern of a green pepper , a few green onions and anything else that was past its prime .
Because I knew I ’d be try the mixture after it cooked , I guess it would be fine to add small art object of vegetable in with the desquamation and a whole veg or two .

All these remnant vegetables and flake – once destine for the compost atomic reactor – turned into an redolent vegetable stock that smelled unbelievable as it was simmer . After simmer for several hour , the vegetable wastefulness turned into a flavorful , light brown pedigree . I used this first batch to make a delicious turkey noggin soup , but vegetable stock could be used for many other kinds of soup , too .
The stock could also be used instead of water to roil potatoes for mashing , for fake Elmer Leopold Rice and sautéing veggie . Vegetable stock can be substituted for water and meat - free-base stock in most formula by using it in the same measure .
My experiment was so rewarding I plan on save my vegetable scraps so I can improve my bloodline on a hebdomadary footing .
