I first made this recipe when we decided to collaborate with the amazing Dario Cecchini from Panzano . Dario is a heartfelt friend of Lori ’s and runs a beautiful if not mad bumbler ’s store / eatery . Imagine turning up and hearing the butcher recite a foresightful and passionate excerpt fromDante ’s Infernoor to discover opera music blaring through the little village .

We thought it would be a adorable idea to put on a Towpath dinner party in the sprightliness of Dario . Dario would air me a whole load of his recipes . I would mess around with them , try them out , put my Towpath take on them and he would fall over for the dinner party . He would sing , recite verse , blow his trump , dress in the colours of the Italian flag and I would pay court to his dish as interpreted by me . Initially , this was quite daunting as I did n’t want to disrespect him or his dishes , but being the tops passionate and enthusiastic human beings that he is , he get it on everything . We decided that this would become an annual affair and we did it for three years , but we have been ineffectual to ordinate over the last few years . I have faith , though , that it will encounter again . Do not be dishearten by the colour and texture of the meat loaf . It almost looks like a loaf of bread – but trust me that once you prick into it with a blob of Dario ’s mostarda , your sassing will just melt away with the succulency of it .

Ingredients

150 g / 5 1/2 oz onion , diced1 clove garlic , minced50 g / 2 oz unsalted butter800 g / 1 3/4 lb soften beef200 g / 7 oz minced pork40 g / 1 1/2 oz beef suet , finely grated115 g / 4 oz old bread , gazump in milk and when soft , really squeezed out2 ballock , lightly beaten2 generous pinch of hack thyme3 teaspoons salt100 g / 3 1/2 oz breadcrumbs , or enough to coat the loafpepper
